Bass four ways: Baked with a red sauce; Wok-n-Roll General Tso’s Style; Grilled with salt, pepper, and a lemon slice; and finally, baked and topped with tomatillos and golden cherry tomato salsa.
As closing weekend came to….a close, we were left with 2 more nice fillets of bass. We had been fishing the east end beaches all day. On our drive back through Springs we came across a table set up in front of Fire Place Farms. payment for the produce was purely honor code base with prices listed out on the surfboard chalk board next to the table. We sorted through the produce and picked out some tomatillos and golden cherry tomatoes. once at home we threw the bass in a pan with some olive oil, salt, pepper, and lemon slices. We sautéd the cherry tomatoes and tomatillos on the stove. When the bass was almost finished we dumped the ‘salsa’ on top and finished off with a few more minutes in the oven.
